I’m back! Did you miss me?! I took a little break last week to enjoy Mother’s Day. Then I battled with a bird that pecked away at our internet connection. Late Wednesday evening and we are back. No more for seen interruptions.
My children, James and Lyric, treated me to the most amazing Mommy’s Day. First, they treated me to dinner at one of my favorite restaurants, Thai 9. I could eat the spice level 5 Pineapple Rice with shrimp and cashews all day. It’s so good. This alone made my day but they didn’t stop there.
Next, they surprised me with a brand new set of cutting knives. Not just any knives. Wusthof knives. Wusthof is considered one of the top knife companies in the world. I now have knives in my kitchen just like culinary genius Gordon Ramsey.
I felt so fancy when I use my knives this weekend to make Green Chicken Tortilla Soup, a recipe from one my new favorite food blogs Meiko and The Dish.
Full of chopped and puréed to matillos, garlic, cumin, chili powder, chicken broth and so much deliciousness, this recipe with its unique twist on the traditional chicken tortilla soup was big hit with the family. We added sour cream and tortilla chips to make it hardy.
Although the soup filled us up, there was still room for dessert. There is always room for dessert.
For the after dinner finale, I chose the popalicious (is that even a word) 7 Up Cake recipe by one of my favorite dessert makers Jocelyn Delk Adam’s of Grandbaby Cakes.
If you have never made a cake with pop, you are missing out. Using soda pop creates the most rich buttery textured cake that has ever been made with no baking soda and no baking powder. How’s that possible? It’s pop magic, literally.
A featured dessert on Meiko’s site, the carbonation from the soda gives the cake the leavening it needs to rise. The citrus flavor from the 7 Up is a bonus. This cake is a winner.
